I let my grandmother leave the planet without learning how to bake from her, because she was so good I didn't think I needed to. Then she was gone, and I had to figure it out myself.

Getting the caramel right took the longest. It wants to be too sweet, or too thin, or too set, or burnt at the edges. I failed a lot of times. The version we make now is smooth, buttery, not over-sweet, and the frosting sets up just so. Hand-frosted, every cake.

Your grandmother might make better caramel than me. But that's about it.
