Peach cobbler is one of the goddess foods.
The women in my community made this. They made it without measuring. They made it for church, for funerals, for Sundays, for the cousin who just came home from the hospital. So we make it in a half pan. Built for the table.
Real peaches — sweet, soft, holding together. Buttery crust that knows how to be both crisp and tender in the same bite. Warm spice that supports the fruit instead of covering it. Not too sweet. Peach should taste like peach.
